Description
A warm, spiced cinnamon nutmeg coffee cake made in one bowl. Perfect for quiet mornings or sharing over coffee.
Ingredients
1 ½ cups all-purpose flour
¾ cup granulated sugar
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
1 cup milk
1 egg
⅓ cup melted butter
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F. Grease an 8×8-inch pan or line with parchment.
2. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
3. Add milk, egg, melted butter, and vanilla. Stir gently until just combined.
4. Pour batter into prepared pan and smooth the top.
5. (Optional) Mix streusel and sprinkle or swirl into the batter.
6. Bake for 30–35 minutes until golden and a toothpick comes out clean.
7. Cool for 10 minutes before slicing. Serve warm or at room temperature.
Notes
You can add chopped nuts, raisins, or a swirl of brown sugar for extra texture and flavor.
Freezes well! Wrap slices and reheat in toaster oven for a quick treat.
